Happy New Year! I am now mainly composed of deep fried fat.
The above is Crispy Pata — aka deep fried pork with skin. It was invented by Spanish colonialists in an effort to destroy the native population of the Philippines, just like crack was invented by the CIA.
In the Philippines it was eaten only on special occasions — someone’s birthday or Christmas or Hanukkah. But in America, every day is a party!
Over the holidays I was eating tons of this stuff at places such as Max’s Chicken. Now I am working it off by carrying a two hundred pound rock on my back while I run up the steps to the Dojo.
